芋頭香米:270g過濾水:1050cc
米麴:180g
飲用水:810cc
檸檬汁:10cc
步驟
1. 米麴用濾袋包好
2. 加入飲用水540cc泡1小時,期間偶而晃動
3. 快速的將白米掏洗2~3次,去除表面灰塵、米糠,不需洗到水清澈
4. 白米加入1050cc過濾水,煮成粥(約60分鐘),攪拌並冷卻至70度

5. 加入飲用水270cc並攪拌均勻

6. 此時溫度會在60度左右,將泡有米麴的水擠壓一下濾袋讓汁液滲出(泡茶那樣的感覺)

7. 將泡有米麴的水倒入,攪拌均勻

8. 把米麴濾袋也放入,電鍋保溫2小時

9. 用果汁濾網將粗渣過濾(可以讓口感更細緻)
