食譜日常 - 焦糖蘋果醬
就像是牛奶糖+蘋果醬的感覺,偶而會覺得這個加那個應該不錯喔~所以這次來嘗試做做看焦糖蘋果醬吧!!
成品顏色有點深,但味道跟想像中的差不多,夾土司吃挺好的!

鮮奶油:40g
果醬材料
紅蘋果:1200g
白糖:160g
檸檬汁:4大匙
水:2杯
蘋果果膠粉:1/2大匙(沒有果膠的話可以用寒天代替)

奶油焦糖白糖:80g
奶油:40g
鮮奶油:40g
果醬材料
紅蘋果:1200g
白糖:160g
檸檬汁:4大匙
水:2杯
蘋果果膠粉:1/2大匙(沒有果膠的話可以用寒天代替)
步驟
準備
蘋果切0.5cm丁,奶油溶化至室溫,材料先秤量好
製作奶油焦糖:
1. 白糖加入鍋子,中火加熱至溶化後轉小火煮約60秒(至接近深褐色),熄火
融化的樣子
到這個程度就熄火
2. 加入奶油,攪拌均勻後,加入鮮奶油,攪拌均勻
3. 加入蘋果塊、白糖、水、蘋果果膠,中小火燉煮90~120分鐘,到用刮刀刮底部,刮過去後不會立即恢復,要數秒鐘才會恢復的程度
