前言
前陣子在逛肉舖的時候,偶然看到有賣牛尾,價格也還不錯,就入手了一些來做西班牙燉牛尾拉~類似的香料類料理,咖哩、紅酒燉牛肉等,靜置一晚至一日後重新加熱都會變得更加美味喔!!!

3根胡蘿蔔(約600g)
1顆大顆洋蔥
1顆紅甜椒
1根大蔥
3顆牛番茄(或番茄罐頭一罐)
4瓣大顆大蒜
300cc牛肉高湯
450cc 紅酒(Spanish rioja or tempranillo)
2片月桂葉
2顆丁香
1茶匙薑粉(或拇指大的薑一塊)
珍珠洋蔥300g
蘑菇一盒
煙燻培根4條
海鹽
胡椒
麵粉
橄欖油
胡椒
麵粉
橄欖油
步驟
2. 洋蔥切塊,紅甜椒切塊,大蔥切塊,大蒜切碎,牛番茄切塊,胡蘿蔔切成2公分小塊
3. 讓灑上鹽跟胡椒的牛尾靜置約30分鐘
4. 把麵粉均勻鋪上牛尾,拍掉多餘的殘粉
5. 熱鍋,加入一大匙橄欖油,加熱至接近冒煙,放入牛尾將各面都煎到焦黃色後(每面約30秒),呈起備用
6. 同一個鍋子,加入洋蔥、大蒜、紅椒,拌炒至洋蔥軟化,加入番茄,半炒約10分鐘至汁液稍乾

7. 加入紅蘿蔔、薑粉、月桂葉、丁香,拌炒約2分鐘後熄火

8. 將蔬菜鋪平,在上方均勻擺上牛尾

9.加入紅酒以及牛肉高湯,淹過牛尾,半斤半肉微露出水面也無妨

10. 蓋上蓋子,烤箱180度,烤2~3小時(2小時還留點口感,3小時就非常軟嫩)

11. 溫柔的取出牛尾放至旁邊備用
